Toffee candy production process

Toffee is a kind of Western-style gummy candy mainly made of sugar, dairy products and fat. Its typical characteristics are rich milk aroma and obvious burnt aroma, and its taste lies between that of hard candy and gummy candy.

Main raw materials

Sugars: white granulated sugar, brown sugar, molasses, glucose syrup/maltose, etc., are used to provide sweetness, caramel flavor and structure.

Fats and dairy products: butter, light cream, condensed milk, etc., are used to provide a milky aroma and a soft, oily texture.

Others: cocoa powder or chocolate (for chocolate toffee), nuts (such as peanuts, almonds, hazelnuts), edible flavorings (such as vanillin), and table salt (for salt water toffee).


Production process flow

1. Raw material pretreatment and weighing

Inspection: Conduct sensory, moisture, microbial and other index tests on raw materials such as sugar and milk fat.

Pre-treatment: Restore raw materials such as butter and cream to the process temperature and filter them. Nuts need to go through processes such as selection, roasting, cooling, peeling and crushing.

Weighing: Accurately measure all raw materials according to the formula to ensure batch stability


2. Syrup boiling

Mixing: Add granulated sugar, glucose syrup, water, molasses, etc. to the sugar boiling pot, stir and heat until completely dissolved.

Boiling: Continuously heat and stir to evaporate the water, causing the concentration and viscosity of the sugar solution to increase. According to the softness and hardness requirements of the product, control the boiling endpoint temperature at around 125-135℃, or test its softness and hardness with cold water


3. Boil the mixture of milk and fat
Mixing: Slowly add cream, condensed milk, etc. to the hot syrup that has been boiled, stirring constantly to prevent lumps.


4. Stir the nuts and syrup together

In the later stage of boiling, add vanillin and other flavorings, as well as pre-treated nuts, etc.

Stir evenly to avoid overheating in some areas or burning the nuts


5. Cutting and forming
Cutting into blocks/strips: Pour the well-mixed materials into the fully automatic cutting and forming machine, which will automatically feed, flatten, cool and cut into blocks for shaping.


6. Packaging

Packaging: Use an automatic packaging machine for single or multiple granule packaging, followed by outer packaging. The packaging materials should be moisture-proof and oil-proof
